Mini Choc Gut-Feeling Cake

We've tried so many vegan dessert recipes, in addition to gluten free dessert recipes – and this really is one of the best!

Sweet food has never been so healthy, and vegan treats have never tasted so good! A great one for those who've been searching out a vegan chocolate recipe. Next time you're looking for easy desserts with few ingredients, give this a go. If you'd like to make it sugar free (we know how many sugar free chocolate lovers are out there!) simply substitute stevia instead of the sweeteners below.

Serves: 1  |  Time: 20 minutes

Ingredients

¼ cup Waltanna Farms flaxseed or flax-hemp flour (or buckwheat flour)
2tbs Gut-Feeling
Pinch of salt
½ tsp baking powder
¼ cup almond milk
1 tbsp coconut oil, melted
1 tbsp maple or rice malt syrup (if sugar free is a requirement, replace with a pinch of stevia powder or a couple of drops of liquid stevia)

Method

Preheat oven to 180oC or 356 F.

Add Gut-Feeling, baking powder and salt to small bowl and whisk until well combined.

Add remaining almond milk, coconut oil and maple or rice malt syrup and whisk until smooth.

Transfer into a ramekin and bake for 15-20 minutes or until centre has cooked through.

Note: Cooking time will depend on ramekin size used. To check for readiness, insert a skewer into the middle of the cake and if it comes out clean and dry it is done.

Remove from oven and cool for 5-10 minutes. Add on your favourite toppings and enjoy.
